Hell's Backbone & Grill

Don and I got away for a much-needed weekend break from regular life.  Having time together was so refreshing and rejuvenating.  We went running, hiking, and out to dinner!
For Christmas, my mom had given us a gift card for a famous restaurant in Utah called Hell's Backbone and Grill.  It is located out in Escalante, and it is famous for it's upscale dishes and farm-to-table philosophy.  The restaurant is located on a 6-acre organic farm where they grow many of their own ingredients.  They also source their pasture-raised meats locally....and wow.  The food was absolutely incredible!  Inspiring, even!
We also spent the day hiking to Lower Calf Creek Falls, which was even more incredible than people had said.  We hiked on an extremely hot day, so reaching the falls was a welcome relief, but whoooaa the water was icy.  It was too cold for me to go in until....enter: the very vibrant, excitable, adventurous guy sitting next to us with his family.  He encouraged us all to dive in as we watched his example.  Without any hesitation, he sprinted to the pool with a loud, primal scream both as he came in and out of the water.  He told us we would regret it if we didn't take the chance, and he was right!  We followed, dunked, and didn't regret it.  

Always jump in the water.
